We made Anzac cookies for Anzac Day. Recipe from Lydia Bakes here, adapted from Little & Friday. We’d tone down in the sugar department if you’re wanting to squeeze on some chocolate. Check out our In the Kitchen category for more things that we have made.
Christmas Day is best for enjoying some quality time with family and friends. As all the restaurants and shops are closed, the day often involves cooking and baking at home. When the kitchen is suddenly getting so very hectic, you’re running back and forth trying to glaze the ham every few minutes, and people are starting to get hungry these cookies will help save the day. They’re soft and chewy and super easy to make, baking in just 11 minutes. You can even make the dough today (Christmas Eve), freeze it and bake tomorrow so they’re fresh out of the oven.

- Be sure to chill the dough before baking especially because it’s so hot in summer.
- Double or even triple the recipe – everyone wants cookies.
- Reduce the sugar to just 1/2 C and add roughly chopped chocolate bits.
Our Christmas tree! The tree is probably older than both of us but still holding strong (with the help of some string). Christmas is a time of joy and a great reminder of the unconditional love we received from Him. No matter if your year was full of troubles, happiness, sadness we know that He is there for us forever and through Him everything is possible. If you have time tonight, take a stroll after dinner and admire the Franklin Road lights in Ponsonby!

Recipes: Chocolate cupcakes & Vanilla buttercream (add blue food colouring to the latter for use as Mr. Cookie Monster’s head)
TIP: Leave 1/4 of the buttercream and mix with desiccated coconut. Add extra colour if need be. Pat onto the cupcakes and add a pair of funky eyes to top it off. Have fun!
When the clouds are grey, the sky overcast, a slight chilly breeze blows and rain is imminent, it usually calls for blankets, hot drinks, a good book, and or baking to lighten things up. Since stumbling upon Lydia’s blog LydiaBakes, I have been tempted to try something from her recipes that were doable with my skills – or lack of should I say. I couldn’t taste the cupcakes myself as I recently developed an allergy towards certain types of chocolate. Nevertheless I got my sister to be the guinea pig and they’re happily acceptable for my first attempt. Yay!
