Raisin and Oatmeal Cookies

When the kitchen is suddenly getting so very hectic, you’re running back and forth trying to glaze the ham every few minutes, and people are starting to get hungry these cookies will help save the day. They’re soft and chewy and super easy to make, baking in just 11 minutes. You can even make the dough today (Christmas Eve), freeze it and bake tomorrow so they’re fresh out of the oven.

Tips:

  • Be sure to chill the dough before baking especially because it’s so hot in summer.
  • Double or even triple the recipe – everyone wants cookies.
  • Reduce the sugar to just 1/2 C and add roughly chopped chocolate bits.
